Baked Potato Balls

Crispy on the outside and creamy on the inside, these Baked Potato Balls are a fun and easy appetizer or snack. Made with mashed potatoes, cheese, and simple seasonings, they’re perfect for using up leftovers or serving at parties.

Ingredients
  

  • 3 cups mashed potatoes chilled
  • 1 cup cheddar cheese shredded
  • 1 egg beaten
  • 1 cup breadcrumbs plain or seasoned
  • 1/2 tsp garlic powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground
  • 2 tbsp olive oil for brushing or spraying

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a bowl, mix mashed potatoes with garlic powder, salt, and pepper until combined.
  • Scoop about 2 tablespoons of the potato mixture, flatten it, place a pinch of cheese in the center, and roll into a ball.
  • Dip each ball into the beaten egg, then coat with breadcrumbs.
  • Place on the baking sheet and brush or spray lightly with olive oil.
  • Bake for 20–25 minutes or until golden and crispy. Serve warm.

Notes

Swap cheddar for mozzarella or add chopped herbs to the potato mix for variety.
