Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, mix mashed potatoes with garlic powder, salt, and pepper until combined.
Scoop about 2 tablespoons of the potato mixture, flatten it, place a pinch of cheese in the center, and roll into a ball.
Dip each ball into the beaten egg, then coat with breadcrumbs.
Place on the baking sheet and brush or spray lightly with olive oil.
Bake for 20–25 minutes or until golden and crispy. Serve warm.
Notes
Swap cheddar for mozzarella or add chopped herbs to the potato mix for variety.
