lemons, juiced

olive oil

Dijon mustard

oregano

thyme

dill

teaspoon
paprika

teaspoons
salt

teaspoon
black pepper
Instructions
Place chicken thighs in a large bowl or zip-top bag.
In a separate bowl, whisk together lemon juice, olive oil, garlic, mustard, herbs, salt, and pepper until fully blended.
Pour marinade over the chicken, cover or seal, and refrigerate for 2 to 6 hours.
Preheat oven to 350°F. Arrange chicken in a baking dish and pour marinade on top.
Bake for 40 minutes or until internal temp reaches 165-175°F. Broil for 2-3 minutes for a browned finish.
Notes
Pairs beautifully with roasted vegetables, rice, or a crisp Greek salad.
