Baked Apple Fritters

These warm, cinnamon-spiced apple fritters are baked instead of fried, making them just a little lighter but every bit as cozy and delicious. Perfect for a fall breakfast or a sweet afternoon treat!

Ingredients
  

  • 2 large apples peeled, cored, and diced
  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 2 eggs lightly beaten
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
  • powdered sugar for dusting (optional)

Instructions
 

  • Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
  • In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, and salt.
  • In a separate bowl, combine milk, eggs, melted butter, and vanilla extract.
  • Gently fold the wet ingredients into the dry ingredients until just combined—don’t overmix; a few lumps are okay.
  • Fold in the diced apples until evenly distributed throughout the batter.
  • Drop 1/4 cup of batter onto the baking sheet for each fritter, spacing them apart.
  • Bake for 15–20 minutes, or until golden brown and centers are set.
  • Let the fritters cool in the pan for about 5 minutes, then transfer to a wire rack.
  • Dust with powdered sugar before serving if desired.

Notes

These are best enjoyed warm with a cup of coffee or cider. You can also add a simple glaze by whisking together 1/2 cup powdered sugar with 1–2 teaspoons of milk and drizzling it over the cooled fritters.
