Ingredients
  

  • 1.5-2 lb pork tenderloin trimmed
  • 8-10 slices bacon regular cut
  • 1/4 cup light brown sugar packed
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Trim the pork tenderloin, removing silver skin, and pat dry.
  • Mix brown sugar, Dijon mustard, garlic powder, smoked paprika, salt, and pepper into a paste.
  • Rub the mixture evenly over the tenderloin.
  • Wrap bacon around the pork and secure with toothpicks if needed.
  • Heat olive oil in an oven-safe skillet and sear the tenderloin on all sides for 5–7 minutes.
  • Transfer to oven and roast for 20–25 minutes until internal temperature reaches 145°F (63°C).
  • Rest for 5 minutes, then slice into medallions and serve.

Notes

Add cayenne for heat or substitute Dijon with a drizzle of honey for a sweeter profile.
