Ingredients

  • 1 1/2 lb beef strips stir-fry beef or thin-sliced steak, about 1/2 inch thick or less
  • 1 can condensed cream of mushroom soup 10.5 oz, undiluted
  • 1 packet dry onion soup mix about 1 oz
  • 1/2 cup water
  • 2 tbsp soy sauce

Instructions

  • Preheat the oven to 350°F.
  • Place the beef strips in a 9x13-inch glass casserole dish and spread them out as evenly as possible.
  • In a medium bowl, stir together the condensed cream of mushroom soup, dry onion soup mix, water, and soy sauce until mostly smooth.
  • Pour the sauce over the beef strips.
  • Use a spoon to nudge the sauce around so most of the beef is coated and the sauce settles into the gaps.
  • Cover the dish tightly with aluminum foil, pressing the edges to seal in the steam.
  • Bake for 1 hour.
  • Carefully remove the foil and gently stir the beef and sauce.
  • Check the beef for tenderness. If needed, cover again and bake for another 15–20 minutes.
  • Let the beef strips rest for 5 minutes before serving.
  • Taste the sauce and season with salt and black pepper only if needed.
  • Serve over rice, mashed potatoes, or egg noodles with plenty of gravy.

Notes

Keep the foil tightly sealed so the beef stays moist. Thin beef strips cook best and become more tender in the mushroom-onion gravy.
