Instructions
Cut the tops off the bell peppers and remove the seeds and membranes.
In a large bowl, combine the ground beef, cooked rice, drained diced tomatoes, and 1/2 cup shredded cheddar cheese.
Spoon the filling evenly into the prepared bell peppers.
Place the stuffed peppers upright in the slow cooker.
Cover and cook on low for 5–6 hours, or on high for 3–4 hours, until the peppers are tender and the beef is fully cooked.
Sprinkle the remaining 1/2 cup cheddar cheese over the peppers during the last 10–15 minutes of cooking.
Serve warm.
Notes
Use ground turkey instead of beef for a lighter version. Add Italian seasoning or taco seasoning for extra flavor.
