5-Ingredient Slow Cooker Stuffed Peppers

Ingredients
  

  • 6 large bell peppers tops removed and seeds discarded
  • 1 lb ground beef
  • 1 1/2 cups cooked rice
  • 1 can diced tomatoes 14.5 oz, drained
  • 1 cup shredded cheddar cheese divided

Instructions
 

  • Cut the tops off the bell peppers and remove the seeds and membranes.
  • In a large bowl, combine the ground beef, cooked rice, drained diced tomatoes, and 1/2 cup shredded cheddar cheese.
  • Spoon the filling evenly into the prepared bell peppers.
  • Place the stuffed peppers upright in the slow cooker.
  • Cover and cook on low for 5–6 hours, or on high for 3–4 hours, until the peppers are tender and the beef is fully cooked.
  • Sprinkle the remaining 1/2 cup cheddar cheese over the peppers during the last 10–15 minutes of cooking.
  • Serve warm.

Notes

Use ground turkey instead of beef for a lighter version. Add Italian seasoning or taco seasoning for extra flavor.
