5-Ingredient Slow Cooker Chicken and Potatoes

Ingredients
  

  • 1 1/2 lb boneless skinless chicken breasts or thighs
  • 1 1/2 lb baby potatoes halved
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • 4 tbsp butter sliced

Instructions
 

  • Lightly grease the inside of a 4-quart or 6-quart slow cooker.
  • Place the chicken in the bottom of the slow cooker.
  • Add the halved baby potatoes around and over the chicken.
  • Sprinkle the ranch seasoning evenly over the chicken and potatoes.
  • Pour the chicken broth into the slow cooker, then place the sliced butter on top.
  • Cover and cook on low for 5–6 hours, or on high for 3–4 hours, until the chicken is fully cooked and the potatoes are tender.
  • Gently stir before serving, spooning the buttery sauce over the chicken and potatoes.

Notes

Add green beans or carrots during the last 1–2 hours for extra vegetables. Chicken thighs give the dish a richer flavor and stay especially tender.
