5-Ingredient Oven Chicken

Ingredients
  

  • 1 whole raw chicken about 4 to 5 pounds
  • 1 packet dry onion soup mix about 1 ounce
  • 1/4 cup butter melted
  • 1 pound baby potatoes whatever variety looks best
  • 3 cups baby carrots the convenient bagged kind is just fine

Instructions
 

  • Preheat your oven to 375°F and lightly grease a large glass casserole dish if it needs it.
  • Pat the whole chicken dry with paper towels, then place it breast-side up in the casserole dish.
  • Scatter the baby potatoes and baby carrots around the chicken, keeping the vegetables mostly in an even layer.
  • Pour the melted butter over the chicken and vegetables.
  • Sprinkle the dry onion soup mix evenly over everything, then rub a little seasoning over the chicken skin so it gets a nice coating.
  • Roast the chicken uncovered for 1 hour 30 minutes to 1 hour 45 minutes.
  • The chicken is done when it reaches 165°F in the thickest part of the thigh and the juices run clear, and you can begin checking around 1 hour 15 minutes if your chicken is on the smaller side.
  • If the top is browning too quickly, loosely tent it with foil during the last part of baking.
  • Let the chicken rest for 10 to 15 minutes before carving so the juices settle back into the meat.
  • Carve the chicken, spoon some of the pan juices over the slices, and serve it with the roasted potatoes and carrots.

Notes

Store leftover chicken and vegetables in a covered container in the refrigerator. For easier leftovers, pull the remaining meat off the bones while it is still fairly easy to handle. Reheat the chicken gently with a little pan juice spooned over the meat so it does not dry out; the potatoes and carrots reheat nicely, though the carrots can become very soft.
