4-Ingredient Slow Cooker Ribbon Noodles

Tender beef stew meat is slow cooked in rich French onion gravy, then tossed with wide ribbon pasta for a hearty comfort meal. This easy four-ingredient slow cooker dinner is savory, glossy, and perfect for cozy family-style serving.

Ingredients
  

  • 2 lb beef stew meat cut into 1 to 1 1/2-inch chunks
  • 2 cans condensed French onion soup 10.5 oz each
  • 1 packet dry onion soup mix 1 oz
  • 12 oz wide ribbon pasta pappardelle or extra-wide egg noodles

Instructions
 

  • Place the beef stew meat in the slow cooker and spread it into a mostly even layer.
  • Pour both cans of condensed French onion soup over the beef.
  • Sprinkle the dry onion soup mix evenly over the top.
  • Cover and cook on low for 7–8 hours, or on high for 4–5 hours, until the beef is very tender and the sauce is dark and glossy.
  • About 20 minutes before serving, cook the ribbon pasta in well-salted boiling water until just shy of tender.
  • Reserve about 1/2 cup pasta cooking water, then drain the noodles.
  • Add the drained noodles directly to the slow cooker.
  • Toss with tongs until the noodles are evenly coated in the beef gravy.
  • If the sauce looks too thick, add 1–2 tablespoons reserved pasta water at a time until silky.
  • Turn the slow cooker to warm, cover, and let sit for 5 minutes.
  • Toss once more before serving.

Notes

Do not discard the reserved pasta water until serving is finished. It helps loosen the gravy and keeps the noodles glossy.
