4-Ingredient Slow Cooker Poor Man's Parents' Day Treat

Ingredients
  

  • 8 raw skinless chicken drumsticks
  • 1 cup barbecue sauce or slightly more if desired
  • 1 cup apricot preserves
  • 1 packet dry onion soup mix

Instructions
 

  • Lightly spray the inside of the slow cooker with cooking spray if desired.
  • Arrange the chicken drumsticks in the bottom of the slow cooker in a mostly even layer.
  • In a medium bowl, stir together the barbecue sauce, apricot preserves, and dry onion soup mix until well combined.
  • Pour the sauce over the drumsticks.
  • Turn the drumsticks gently so they are evenly coated in the sauce.
  • Cover and cook on low for 5–6 hours, or on high for 3–4 hours, until the chicken is very tender.
  • Check that the chicken reaches at least 165°F internally.
  • Transfer the drumsticks carefully to a serving platter.
  • Spoon the warm sauce from the slow cooker generously over the top before serving.

Notes

Use a little extra barbecue sauce for a saucier finish. Serve with rice, potatoes, coleslaw, or buttered corn.
