Ingredients
  

  • 2.5 lbs baby red potatoes whole or halved
  • 1 cup sour cream full-fat
  • 0.5 cup butter salted, cut into pieces
  • 1.5 tsp salt plus more to taste

Instructions
 

  • Grease the slow cooker.
  • Add potatoes to the bottom.
  • Mix sour cream with salt and dollop over potatoes.
  • Scatter butter pieces on top.
  • Cook on LOW 4–5 hours or HIGH 2–3 hours until tender.
  • Stir gently before serving and adjust seasoning.

Notes

For extra flavor, add garlic, chives, or shredded cheese at the end. Stir gently to keep some potatoes intact while allowing others to create a naturally thickened sauce.
