Ingredients
  

  • 1/2 cup creamy peanut butter regular creamy peanut butter, the kind you don’t have to stir
  • 3 tablespoons salted butter softened
  • 1 cup powdered sugar added gradually
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening or coconut oil optional, for smoother dipping chocolate

Instructions
 

  • In a mixing bowl, stir together the creamy peanut butter and softened salted butter until smooth and fully combined into one uniform, soft mixture.
  • Gradually stir in the powdered sugar until a thick peanut butter dough forms; it may look crumbly at first, then come together.
  • Cover the bowl and refrigerate the peanut butter dough for about 15 minutes to firm it up.
  • Remove the chilled dough from the refrigerator and shape it into 1-inch balls using your hands; you should get about 24.
  • Place the balls on a baking sheet lined with wax paper, then cover the tray and refrigerate for at least 20 minutes so they hold their shape when dipped.
  • Melt the semi-sweet chocolate chips according to the package instructions, using 30-second microwave increments and stirring between each one, or using a double boiler.
  • If using the optional vegetable shortening or coconut oil, stir it into the melted chocolate for a smoother dipping consistency.
  • Using a fork, dip one chilled peanut butter ball at a time into the melted chocolate, let the extra chocolate drip off through the fork tines, and place the coated ball back onto the wax paper.
  • Repeat with the remaining peanut butter balls, gently stirring the chocolate if it thickens, then cover and refrigerate the coated balls until the chocolate is set and ready to serve.

Notes

Store the peanut butter balls covered in the refrigerator until ready to eat; they are especially good cold but can sit out briefly to soften. For longer storage, freeze once the chocolate is completely set, layering them in a freezer-safe container with wax paper or parchment between layers for up to one month; let frozen balls sit on the counter for a few minutes if you want them softer.
