Ingredients

  • 4 raw chicken leg quarters
  • 1 packet dry onion soup mix about 1 oz
  • 1/2 cup ketchup
  • 1/2 cup water

Instructions

  • Preheat the oven to 350°F.
  • Arrange the chicken leg quarters skin-side up in a 9x13-inch baking dish.
  • In a small bowl, stir together the dry onion soup mix, ketchup, and water until combined.
  • Pour the sauce evenly over the chicken.
  • Bake uncovered for 60–75 minutes, spooning pan juices over the chicken once or twice if desired.
  • Cook until the chicken is browned, the sauce has thickened, and the thickest part of the thigh reaches 165°F away from the bone.
  • Let the chicken rest for 5 minutes before serving.

Notes

For a stickier glaze, baste during the final 15 minutes of baking. Serve with mashed potatoes, rice, or buttered noodles to catch the pan sauce.
