4-Ingredient Cheesy Kielbasa Bake

Ingredients
  

  • 12-14 oz smoked kielbasa sliced into rounds
  • 28-32 oz frozen diced potatoes O'Brien style or plain hash browns
  • 1 can condensed cream of mushroom soup 10.5 oz, undiluted
  • 2-2 1/4 cups shredded cheddar or cheddar-jack cheese divided

Instructions
 

  • Preheat the oven to 375°F and grease a 9x13-inch baking dish.
  • In a large bowl, combine the frozen potatoes and condensed cream of mushroom soup. Stir until the potatoes are evenly coated.
  • Add about 1 1/2 cups of the shredded cheese and stir to combine.
  • Fold in the sliced kielbasa, making sure it is evenly distributed throughout the mixture.
  • Spread the mixture evenly into the prepared baking dish and top with the remaining cheese.
  • Cover tightly with foil and bake for 25 to 30 minutes.
  • Remove the foil and continue baking for 15 to 20 minutes, until the cheese is melted and golden at the edges. Broil for 1 to 2 minutes if needed, watching closely.
  • Let the casserole rest for 5 to 10 minutes before serving.

Notes

Swap in cream of chicken or pepper jack for a different flavor. Add onions or bell peppers if you want a little more texture.
