Ingredients
  

  • 8 ounces cream cheese softened
  • 2 cups sharp cheddar cheese shredded, preferably freshly shredded
  • 1 10-ounce can diced tomatoes with green chiles drained very well
  • 1 sleeve sturdy buttery crackers for serving

Instructions
 

  • Preheat your oven to 350°F and lightly grease a small baking dish, or line a small warm-dip-safe serving platter with foil for easier cleanup.
  • Put the softened cream cheese, shredded sharp cheddar, and well-drained diced tomatoes with green chiles in a medium bowl, then stir until evenly mixed.
  • Spread the cheese mixture into the prepared baking dish in an even layer so it heats through evenly.
  • Bake for 20 to 25 minutes, until the dip is hot, melted through the center, and bubbly around the edges; start checking around 20 minutes.
  • Let the dip rest for about 5 minutes so it thickens slightly, then serve it warm with sturdy buttery crackers.

Notes

Cover leftovers and refrigerate for up to three days. Reheat in a small baking dish at 350°F for about 10 to 15 minutes, until hot and creamy, or microwave smaller portions in short bursts, stirring between each one. The baked dip can also be kept warm in a small slow cooker on the warm setting; stir occasionally.
