4-Ingredient Amish Rhubarb Crunch

A simple Amish-style rhubarb dessert made with tart fresh rhubarb, sugar, dry cake mix, and melted butter. It bakes into a bubbling fruit base with a golden, crisp, buttery topping.

Ingredients
  

  • 6 cups fresh rhubarb diced, leaves discarded
  • 1 cup granulated sugar
  • 15.25 oz white cake mix dry, do not prepare according to package directions
  • 1/2 cup unsalted butter melted

Instructions
 

  • Preheat the oven to 350°F and grease a 9x13-inch baking dish.
  • Rinse the rhubarb, trim off both ends, discard all leaves, and dice the stalks into about 1/2-inch pieces.
  • Pat the rhubarb dry if very wet, then spread it evenly in the bottom of the prepared baking dish.
  • Sprinkle the granulated sugar evenly over the rhubarb without stirring.
  • Pour the dry white cake mix over the top and spread it into an even layer.
  • Slowly drizzle the melted butter over the cake mix, covering as much of the surface as possible.
  • Bake on the center rack for 35–45 minutes, until the topping is deep golden brown and the rhubarb juices are bubbling around the edges.
  • Let the crunch rest for 15–20 minutes before serving so the juices can thicken.

Notes

Serve warm with vanilla ice cream or whipped cream. For a sweeter variation, add sliced strawberries with the rhubarb.
