Instructions
Preheat the oven to 350°F and grease a 9x13-inch baking dish.
Rinse the rhubarb, trim off both ends, discard all leaves, and dice the stalks into about 1/2-inch pieces.
Pat the rhubarb dry if very wet, then spread it evenly in the bottom of the prepared baking dish.
Sprinkle the granulated sugar evenly over the rhubarb without stirring.
Pour the dry white cake mix over the top and spread it into an even layer.
Slowly drizzle the melted butter over the cake mix, covering as much of the surface as possible.
Bake on the center rack for 35–45 minutes, until the topping is deep golden brown and the rhubarb juices are bubbling around the edges.
Let the crunch rest for 15–20 minutes before serving so the juices can thicken.
Notes
Serve warm with vanilla ice cream or whipped cream. For a sweeter variation, add sliced strawberries with the rhubarb.
