Ingredients
  

  • 1 lb ground beef lean if desired
  • 1 small onion diced
  • 1 green bell pepper diced
  • 1 tsp garlic powder
  • 1 tsp dried parsley optional
  • 2 15 oz cans sloppy joe sauce such as Manwich
  • 1 16 oz box rotini pasta cooked and drained
  • 2 cups shredded cheddar cheese divided
  • salt and pepper to taste
  • chopped fresh parsley or basil optional garnish

Instructions
 

  • Set a large skillet over medium heat, then add the ground beef, diced onion, and diced green bell pepper.
  • Break up the beef with a spoon and cook until the meat is browned and the vegetables are soft, about 7 to 8 minutes.
  • Drain off any extra grease from the skillet if needed.
  • Pour in both cans of sloppy joe sauce, then stir in the garlic powder, dried parsley, and a pinch of salt and pepper.
  • Bring the sloppy joe mixture to a gentle simmer for a couple of minutes so the flavors can come together.
  • Add the cooked and drained rotini to the skillet, stirring well to coat the pasta, then mix in 1 1/2 cups of the shredded cheddar cheese until melted and gooey.
  • Sprinkle the remaining 1/2 cup cheddar cheese over the top, cover the pan with a lid or foil, and let it sit on low heat for 3 to 5 minutes until the cheese is melted and bubbly.
  • Scoop the casserole into bowls and garnish with chopped fresh parsley or basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stove or in the microwave with a splash of water or broth to loosen the sauce. This casserole can be frozen, though the pasta may soften a bit after thawing.
