3-Ingredient Slow Cooker Zucchini Dessert

A soft, cozy slow cooker dessert made with tender zucchini, cake mix, and butter. This easy dump-style treat has a sweet, cobbler-like texture and is a simple way to turn summer zucchini into a warm family dessert.

Ingredients
  

  • 4 cups zucchini peeled and chopped
  • 1 box yellow cake mix or spice cake mix
  • 1/2 cup butter melted

Instructions
 

  • Lightly grease the inside of a 4-quart or 6-quart slow cooker.
  • Add the chopped zucchini to the bottom of the slow cooker.
  • Sprinkle the dry cake mix evenly over the zucchini. Do not stir.
  • Pour the melted butter evenly over the cake mix, covering as much of the dry mix as possible.
  • Cover and cook on high for 2–3 hours, or on low for 4–5 hours, until the zucchini is tender and the topping is set.
  • Let the dessert rest for 10–15 minutes before serving warm.

Notes

Spice cake mix gives this dessert a warm, zucchini-bread flavor. Serve with whipped cream or vanilla ice cream.
