Ingredients
  

  • 4 cups rhubarb trimmed and cut into 1-inch pieces
  • 1/2-2/3 cup granulated sugar adjust to taste
  • 1 tsp pure vanilla extract

Instructions
 

  • Rinse rhubarb under cold water, pat dry, trim ends, discard leaves, and cut stalks into 1-inch pieces.
  • Place rhubarb evenly into the slow cooker. Sprinkle sugar over top and drizzle with vanilla extract.
  • Gently stir to distribute ingredients, then cover with lid.
  • Cook on LOW for 3–4 hours or HIGH for 1.5–2 hours, until rhubarb is soft and broken down.
  • Stir well and taste, adjusting sugar as needed.
  • Let sit uncovered for 5–10 minutes to thicken slightly before serving.

Notes

Serve warm over ice cream, pancakes, or yogurt. Add strawberries during cooking for a sweeter variation.
